
Grilling Method: Indirect/Medium Heat
2 small pork tenderloins (10 to 12 ounces each), cut in half on the diagonal
½ cup best quality prepared pesto
Kosher salt, to taste
Parmesan-Reggiano for grating

Butcher Twine
Preheat gas or charcoal grill and set for indirect medium-heat grilling.
Soak wraps and twine in water for up to 5 minutes.
Pat dry tenderloins with paper towels. Season lightly with salt. Coat each tenderloin piece generously with pesto. When ready to grill, place one piece of the pesto-coated tenderloin in the middle of each wrap. Tie wrap and place in the center of the cooking grate over indirect medium heat. Grill about 12-15 minutes until the juices run clear and internal temperature reaches 155-160ºF.
Remove wraps from grill, discard twine and let rest for 5 minutes. Slice on the diagonal into ½ inch slices and serve with additional pesto and shavings of Parmesan-Reggiano.
